With a long history, unique features and exquisite cooking, Azerbaijani cuisine is famous for color, aroma and taste. Every region in Azerbaijan has its own traditional recipes.

Masalli, a unique region located in 240 km of Baku has much to offer tourists and locals.

One of the many reasons why traveling in Masalli is unique culinary delights. Ancient kitchen utensils made of stone and clay were discovered during the archaeological excavations in the region. There are many things in general you can try in Masalli.

 A part of the population of the southern region of Azerbaijan – Masalli is ethnic Talysh. Talysh cuisine is very rich, diverse and has an ancient history.

Whether you have a sweet tooth or prefer all things savory, Masalli has something for everyone. Rice dishes and probably the most famous and popular are in Masalli.

Among them are various types of pilaf: Pakhla pilaf, Lobya pilaf, Turshulu ash, Lobya ash, Ayran ash, etc.

In addition, more than 20 types of meat dishes, nine kinds of fish dishes, eight types of cereals, five types of omelet, 28 types of fruit dishes, different kinds of "syrdag" (stewed eggplants), etc. are also known in the Talysh cuisine.

Some dishes are so popular that if you're in Masalli you cannot pass up the chance to try them. 

Lentil soup Merji is widely distributed dish throughout the region. It is super easy, cozy and healthy lentil soup that is huge flavor.

But, perhaps, the crown dish of Talish cuisine is Lavangi: a bird or fish stuffed with nuts, onions, sumac, which is only prepared in Masalli in tandoor.

Desserts are the perfect way to finish your meal on a delicious note. 

You cannot leave Masalli without having tasted its traditional sweets and desserts. 

So for dessert, it is often cooked Lyukyu - flat cakes of rice flour with butter and milk, sweet rice flour buns, etc.

The diet of Masallians varies and depending on the season. For example, a plump pilaf with beans and finely chopped fresh dill is especially popular in May.

Leaf salad with apple sauce flavored with aromatic herbs is also common.

Sometimes the most unexpected foods are totally brilliant together.

There are a number of food combinations in Masalli cuisine. For instance, smoked fish can be served to a table with pilaf or sweet watermelon.

Great demand in the markets of the capital, other cities, as well as neighboring Russia enjoys Masalli greens. Walking around the area, near many wickets, you can find small counters with greens.
